Wild caught, Pacific (Alaskan) salmon is the heart healthiest fish. Containing loads of Omega-3 fatty acids, protein, B vitamins, Potassium and Selenium, Pacific salmon may be one of the top “superfoods”. In addition, salmon contains antioxidants like Astaxanthin. Astaxanthin, a known compound linked to several powerful health effects. As a member of the carotenoid family of antioxidants, Astaxanthin gives salmon its bright red pigment (color.) Additionally, salmon is very quick to prepare. It can be baked, grilled, broiled or sauted. Use your favorite marinade, herb, spices, or sauce. It cooks and tastes great with just about anything. So, experiment!
One of my all-time favorite dishes- wild caught Alaskan salmon, sauteed (glazed) with organic honey and herbs vegetable medley. The aroma of organic ginger, cilantro, lemon juice, honey, and coconut oil all come together to delight the palate. I share my recipe below, however, you can modify the list to your own taste. The result is a delicious and healthy meal.
List of ingredients:
Wild caught Pacific (Alaskan salmon)
Organic baby carrots, summer squash and zucchini (use your favorite veggies)
Organic raw honey
Organic fresh cilantro
Organic coconut oil
Organic lemon juice
How to prepare:
In a large pan or wok, put two tablespoons of organic coconut oil. Let the thick oil stand in the pan for a few minutes. Add one total cup of sliced baby carrots, sliced, or chopped squash and zucchini. Saute the vegetables on low heat, until they appear slightly golden in color (about 10-12 minutes.)
Put a 3.5 oz. filet of wild caught Alaskan salmon in the same pan with the vegetable medley. Continue to saute the salmon and vegetables on low heat, until the fish has a paler color of red (about 10 minutes.)
In a small saucepan, add three tablespoons of organic raw honey, one teaspoon of organic lemon juice, half a teaspoon of organic ginger, a few small leaves of fresh organic cilantro. Simmer on lowest heat for 5-7 minutes.
In the pan or wok, pour the honey glaze on top of the salmon. Let it stand in the hot pan or wok for another 5 minutes.
Serve the salmon and vegetables in a flat dish and place a few leaves of fresh cilantro on the salmon (if you like.)
